Formula scale-up base: four to two instead of a simple halving
Linear scaling is feasible, but the temperature, fermentation and heating times are judged separately, otherwise the taste changes.
The formula was changed from a four-person to a two-person formulation, and the least cost-effective approach was to multiply the factor of 0.5, but the reality was far more complex than the multiplier. The staples, such as flour, water and meat, can be scaled in linear terms, with salt, sugar and spices being more subjective, and cutting them directly in half often light or salty; yeasts in baking are also co-ordinated with temperature, time, and not a pure proportion.
Which should be proportional and which should be adjusted separately
- Powders, liquid mains: strictly proportionally scaled
- Salt, spices, peppers: proportional, but in turn, taste.
- Fermented pasta: yeast and time need to be reassessed
- The capacity limit for the pan is one batch, it's too big to split.
The scaling is based on the determination of the baseline and the conversion of the base amount, which is followed by the idea of [proportional versus matching] (/ratio-and-scaling). If the original formula uses a spoon and you want to use a gram, go through it first. The problem of precision after scaling is the same as [rounding-significant-figures], so do not write an inoperable amount of 0.333 tea spoons.
Non-linear between heat and time
A Tongan double, boiling and collecting time does not exactly double, and a deeper, slower heat can change the rhythm, depending on the state rather than on the dead. Similarly, it takes longer for the grill to become more fully fledged at the centre. With this in hand, a combination of [common conversion errors] (/common-conversion-mistakes) would reduce the number of overturns.
