Ratio versus match: Why does it taste different?

Linear scaling is available for dry and wet formulations, but salt, spices and fermentation are to be judged separately from non-linear effects.

The ratio is a tool that represents a two-volume-multiple relationship, and the ratio is common for formulations and redeployments. The four-person diet is converted to a two-person diet, with a direct factor of zero-point-five, which appears to be simple, but certain ingredients do not change linearly with the number of people: salt, pepper, spices tend to be subjectivity, which may be too salty after doubling; the waking time of fermented noodles is more related to totals, ambient temperatures than simple proportionality.

The right way to match

  • Let's look for the baseline. The rest of it is expressed against it.
  • Unified units and then compare to avoid mixing g with ml
  • Keep a reasonable number after scaling, do not write 1.3333 g
  • The spices are more likely to be added and adapted.

In practice, dry mains can be scaled up proportionately, and liquids and spices are recommended proportionally but leave room for adjustment. Baking is more dependent on precise matching than cooking, and a small deviation in the ratio of flour, water and yeast may fail, with more caution in scaling.

Concentration and dilution

The dilution of disinfectant fluids and pesticides is by nature a problem of proportion: the ratio 1:100 indicates a source of 100 water. The confusion between "1:100" and "1 percent" could have caused an accident.
